It's Dessert. And It's Tofu.

We are firmly not of the opinion that midlife means giving up dessert.

In fact, one of the reasons so many women struggle with nutrition is that they've spent decades being told that healthy eating means restriction. Less joy. Less pleasure. Less of everything.

We're believe in a different approach.

This chocolate mousse is rich, deeply chocolatey, and genuinely satisfying. It also happens to be made with silken tofu, which means it brings a little more to the table than your average dessert.

The tofu creates an impossibly silky texture while adding plant protein. The dark chocolate contributes antioxidant-rich cacao. And because it's intensely flavorful, a small serving feels completely satisfying.

In other words: it's dessert.

It just happens to show up with credentials.

Ingredients

  • 1/2-3/4c sugar
  • 1 lb silken tofu
  • 8 oz high quality bittersweet chocolate, melted
  • 1 tsp vanilla extract
  • 3/4c strong coffee 
  • Cacao nibs for topping

Directions

  1. In a small pot, combine sugar with coffee, bring to boil and cook until sugar is dissolved, stirring occasionally.  Cool slightly.
  2. Put all ingredients (except for cacao nibs) in blender and puree until smooth
  3. Divide into 4-6 ramekins and top with nibs.
  4. Chill at least 30 minutes.
