Giant Batch! Gluten-free Hempseed Cookies

This is a giant version (about 4x a normal recipe). It's the combo that I make most often so I can freeze dough and have it at the ready as needed. A few cookies can even be baked in the toaster!
INGREDIENTS
9c almond flour/meal
2c hemp seeds, ground into meal
3 tsp kosher salt
3 tsp baking soda
4 sticks butter
1c natural peanut butter (smooth or crunchy)
2c brown sugar
2c white sugar
4 eggs
2 Tablespoons vanilla extract
8oz toasted pecan pieces 
chocolate chips - approx one bag, or to taste

INSTRUCTIONS
Preheat oven to 350 degrees
In a stand up mixer:
- cream butter
- add brown and white sugar
- add eggs
- add vanilla
In a bowl, mix almond flour, hemp seed meal, salt, baking soda
Add dry ingredients to wet and mix
Add pecans
Add chocolate chips
Place dough in approx 2 tablespoon mounds on greased cookie sheet, or use parchment paper or silpat baking mat
Sprinkle with salt
Bake for 8-10 minutes; rotate pan and bake for another 8-10 minutes (until lightly brown).
Cool before eating, if you can wait!
